What's for Dinner: This Week's Menu


When it comes to the menu plan for the next week, well, it'll be interesting.  My husband has a bunch of stuff going on at work, so he's not sure what his schedule is going to be like (for instance he's going to be home late tonight, so I need something that he can reheat when he gets home), we are having a "false thaw" period in our weather so the kid's allergies are going nuts (the poor daughter is utterly miserable today) and I've got a couple of piles of paperwork to fill out, records to find and things like that to do on top of normal household and homeschool stuff AND if my husband's tax paperwork comes in I'll be doing taxes on top of it.  So, basically I'm putting this menu together knowing that I'm probably not going to be able to do all the meals I have planned and will have to punt a few days here and there so I can get everything done that I need to get done.  We'll see how it goes, though.

So, let's get to it!

Wednesday:  Spaghetti with meat sauce, home made bread, salad

Thursday:  Beef and Barley stew, home made bread

Friday:  Pork chops, mashed potatoes and gravy, salad

Saturday:  Pizza and breadsticks

Sunday:  Pad Thai Stir Fry (I don't have things like bean sprouts, we can't do peanuts and such, so I'm just going to make a stir fry with Pad Thai noodles, shrimp, eggs, tofu and some Pad Thai sauce and see how it goes.  I think it'll taste okay...it just won't be Pad Thai).

Monday:  Meatloaf, baked potatoes, green beans

Tuesday:  Fried chicken, baked beans, mashed potatoes and gravy, biscuits

And there you go folks.  My tentative menu plan for the week.  We'll see how it goes.  We are supposed to do the Radish box assignment this week (home made ravioli, thus the ricotta and shredded Parmesan  cheeses in the fridge), but I'm not sure if we are going to get to it with how much we have going on.  We shall see I guess.

  2. Your menu looks a lot like what I cook. Except for the Pad Thai. Dh won't eat that.
    Here's my menu:
    Sun: Apricot BBQ Turkey Meatballs and Little Smokies
    (Purchased BBQ sauce and my homemade jam combined with a little water and the meats. Heated in the IP.)

    Mon: Chef Salads. (I got home late so this was fast & easy. Lettuce, cheese, turkey, homemade croutons dressing.)

    Tues: "Taco" Tuesday - Cheese Quesadillas, black beans, yellow rice, lettuce, red & green salsas, sour cream, olives.

    Wed: Breakfast for Supper Night - Cheese Omelettes, Bacon & Toast

    Thurs: Spaghetti and Meat Sauce, garlic bread, salad

    Fri: Fish Sticks, French Fries in Air Fryer. Cole Slaw, Rye Bread

    Sat: Date Night

  3. I am going to make a big pot of stew tomorrow and I may make a pot of chilli on Friday and that way I'll be able to put at least 3 servings of each into the freezer.
    It's also time to do a bit of baking - I'm thinking of a yogurt loaf with lemon and cranberries plus one of orange & dried peel so I can use up some buttermilk.
    Then I need to do a bit of a cleanup in my fridge!

  4. My daughter and I bought 6 months of radish boxes for my 4 grandchildren. The kids really like cooking and a new box each month.

  5. A crockpot meal might work for you. I made a couple off of Budget Bytes website (the chicken salsa one) & tonight we're trying the sesame beef.
