Menu Plan For Week of 4/18/16

I can't believe I was just on Pinterest for oh...two hours now...and I'm still kind of winging the menu plan for the week. 

I'm having a hard time staying focused.  I'm feeling more than a little discouraged, depressed and more than a little overwhelmed.  My husband went to the dentist today.  Good news:  They were able to save his tooth.

Bad news:  We are looking at two more root canals and other dental work that they feel needs to be done on my husband's remaining teeth.  Basically, every bit of money we've paid off on dental bills is going to be put right back onto the care credit and we're looking at even more than that. By a decent margin.  So much for that lovely "do not exceed" number we originally got.  That got blown out of the water by a huge margin *sigh*.  Times like this I really wish my husband had just gotten dentures like I suggested, but by this point we're committed to the course of action he decided on, so I just need to suck it up and deal with it.

I spent most of lunch staring into space just feeling soul deep tired. 

I'll feel better tomorrow and hopefully get a better handle on the budget somehow to start putting a lot of money away, somehow...I know I can do it.  I have faith.  Right now I honestly just want to crawl into bed, pull the covers over my head, suck my thumb and pretend I'm five *laugh*. 

We do, however, have to eat this week, so the menu plan is as follows for now...

Menu for Week of 4/18/16

Monday:  Loaded Baked Potato Soup (use up some leftover ham in soup).  This turned out pretty good.  Not great, but pretty good.

Tuesday:  Do for yourself night (husband ate random leftovers, I ate leftover soup, my daughter had a cheese quesadilla, and my son had popcorn and tuna salad).

Wednesday:  Pancakes, eggs, bacon.

Thursday:  Pork steaks, applesauce, rice

Friday:  Baked chicken, cranberry sauce, rustic potatoes gratin, stuffing

Saturday:  Leftovers

Sunday:  Club sandwiches (use leftover chicken, pull a little ham from freezer), oven fries.

To Bake/prepare:  Bread, pancakes (make triple batch on pancake night), desserts.  Baking day(s):  Various.

Desserts:  Cake with chocolate frosting, lemon blueberry cake

  1. I am so sorry you are feeling discouraged. Just remember that there is a bunch of us out her pulling and praying for you and your beautiful family. BTW, sometimes it's OK to pull the covers over your head and hide in bed. Just don't stay there too long!!

    1. I did pull the covers over my head last night for a while. I'm doing better today and am just figuring I'll take it one step at a time like I always do. It'll work out one way or the other, so obsessing about it will just make overly emotional and depressed. So, I decided not to do that :).

  2. I know that feeling of wanting to crawl back in bed all too well. Just breath deeply and try to focus on the good stuff...like all the canned good you have put in your pantry already this year!

    Your meals look really good this week. I really like your Friday meal...it's given me some ideas for a meal when my brother visits this weekend! The club sandwiches sounds good too! We've had chocolate chip pancakes quite a bit recently as my daughter has been eating the leftovers for breakfast. I make a triple batch for dinner, then the leftovers last for a week or two. When she runs out, she starts bugging until we're forced to have it for dinner again.

    This week I'm going to try making a batch of bread pudding, to use up some of the freezer burned buns and bread crusts I've saved in there.

    1. I'm thinking of putting pancakes and/or pancake like meals a regular part of the weekly rotation for a bit. It's cheap, filling and the kids will eat it and I can put different fruit on top to make it a bit more balanced diet-wise.

      All I keep thinking of is the line from "Kiki's Delivery Service" (daughter loves that movie, so I know it too well) where she says, "All we can afford to eat are pancakes" and she keeps making references that only eating pancakes will make you fat *laugh*. Not sure why that pops into my head when I think of eating pancakes regularly, but it does.

  3. Oh sweetie, I'm so, so sorry. What a headache.

    Random ? - Where in Alaska do you live? We're taking a family trip there this summer. First time in AK. Yippee! Plan to visit Anchorage, Homer, & Seward.

    Also, do you read Donna Freedman's "Surviving & Thriving" blog? She lives in Anchorage.

    1. We live in the Wasilla area, about an hour North outside of Anchorage. *Laugh* I find it funny that I've lived in Alaska 15 plus years now and you're going to beat me to Homer your first trip out ;). I'll get there someday.

      I've been to Donna's blog a time or two, yes :). I haven't checked it out recently, I have to say. Might have to remedy that sometime soon.

  4. I feel sorry for your husband and you! Dental work is the worst and costs so much!

    1. I'm doing better today after three uninterrupted hours of sleep last night (sounds like not a lot, but it really is for me). I know we'll make it okay...I was just kind of hoping to see the light at the end of the tunnel only to find out the tunnel is another five miles long...such is life sometimes :).
