Anyway, the ability to humor myself aside, if people are wondering where the weekly goals update is...well...I got none of the goals for last week done. I was so out of it with my jaw that sitting at a sewing machine or cleaning out a furnace room and such just was not going to happen. So, I'm going to just wing it this week and see how much of that list I can get done, which is going to be fun as I have a lot of appointments to make this week for the kids and such. Then I'll move on to March's goals and some of the goals (like sewing a dress) are getting transferred onto next month anyway. So, we'll see how this week goes. May it go better than last week on getting things done!

Menu Plan for Week of 2/29/2016
Monday: Pork chops with pantry friendly fig sauce, apple sauce (leftovers from dinner the other night), roast potatoes with garlic and ParmesanTo Bake: Bread, fig sandwich cookies, chocolate chip cookies (baking days: I have no idea. Whenever I have time as I've got numerous appointments this week *laugh*).
Tuesday: Beef and vegetable stew
Wednesday: Pancakes with Blueberries (to use up rest of canned blueberries I opened last week), eggs, peaches (if have time use crepes instead of pancakes)
Thursday: Chicken salad sandwiches (home made bread), pears
Friday: Ham and Eggs, fruit cocktail, cornmeal pancakes with fig jam
Saturday: Leftovers
Sunday: Fried chicken, potato salad, baked beans
Desserts: Bird's Nest Pudding (recipe coming tonight or tomorrow), apple pie, chocolate chip cookies and milk (daughter and MAYBE son if I can get him to try them), pumpkin pasties
It all sounds great! I need to find fig jam. I don't make much pork, but yours sounds great!
ReplyDeleteI don't think I've ever seen fig jam available at the stores, but if you get dried figs it's really easy to make. Under the fig sauce recipe I THINK I liked to the Ball site where the recipe is available online :).
DeleteIf you don't can you can freeze jam or jelly pretty easily, just make sure you get freezer pectin vs. regular pectin.
Looks like it is fig week at your house this week, Erika! I'm sensing you like themes when eating.*laugh* You know, we haven't had beef stew in a while at our house either. I'll have to remedy that soon!
ReplyDeleteHeh. There's a reason there's a theme most times. In this case I reached in and grabbed the one pint jar of fig jam thinking it was BBQ sauce (sleep deprivation is fun) and opened it before I realized my mistake. I have a severe lack of refrigerator space right now due to disorganization (really, that's what is causing it at this point) so the last thing I need is a pint jar of fig jam hanging around. Sooooo, I'm using it up *laugh*.
DeleteI think I am going to make your Sunday meal plan maybe Thursday. I will add some coleslaw as cabbage always is on sale in March so I can make that when I make kimchee.

Yeah, I'm HOPING to see cabbage on sale this week, but if I don't I'll plan on making coleslaw next week or so :). I'm looking forward to cabbage and potatoes going on sale this month!
DeleteI am having refrigerator issues, too. The garage one works. It's quite old, and is out in the garage, so it's not pretty. The kitchen one is beautiful on the outside, but only keeps things cool, not cold right now. We are leaving it it the kitchen for photos for our house sale. So, I'm trotting back and forth, back and forth--how handy:) I'm just glad I have that old one, or I would be in TROUBLE!
ReplyDeleteYour meals look much more interesting than mine this week. I cooked today, and then will make soup tomorrow and eat it for the rest of the week, I think. I'd better make lots. We are just too busy this week for me to do much cooking, but I need dinners Wednesday, Thursday, and lunch on Friday before I have time to cook much again. Maybe someone else in the family will take pity on me. My 19 year old daughter often cooks on Thursday. Hopefully, she will this week.
